Pav Bhaji Mumbai Style
There’s something instantly nostalgic about the aroma of buttery pav bhaji sizzling on a hot tawa. Spicy mashed vegetables slow-cooked with butter, tomatoes, and bold masalas, served with golden toasted pav, this is pure Mumbai street-food comfort. Made with MM1 Pav Bhaji Masala, every bite is rich, chatpata, and packed with that iconic roadside flavour.
Ingredients
Serves 2–3 people
- 2 potatoes, boiled and mashed
- 1/2 cup green peas, boiled
- 1 small capsicum, finely chopped
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 tbsp butter
- 1 tbsp oil
- 1 tbsp MM1 Pav Bhaji Masala
- 1 tsp MM1 Kashmiri Laal Mirch
- 1/2 tsp MM1 Kesari Haldi
- Salt to taste
- Fresh coriander
- Lemon wedges
- 4 pav buns
Method
Follow these steps for the best results
Heat butter and oil on a pan or tawa. Add the chopped onions and sauté until soft and lightly golden. Add capsicum and cook for a minute, followed by the tomatoes. Let them soften completely.
Now add MM1 Pav Bhaji Masala, MM1 Kashmiri Laal Mirch, MM1 Kesari Haldi, and salt. Roast the मसाला gently until the butter starts releasing its aroma.
Add the mashed potatoes and green peas, and begin mashing everything together on the tawa. Add a little water to adjust consistency and cook for 5 to 7 minutes until the bhaji turns thick, buttery, and smooth.
Finish with a generous knob of butter, fresh coriander, and a squeeze of lemon.
Toast the pav buns in butter until golden and slightly crisp.
Serve hot with extra butter on top, chopped onions, and lemon wedges.
